Friday Food \ Spring salad with poppy seed dressing

flower saladIt’s been a great first Spring week in Amsterdam. Daffodils keep shooting out of the ground and people are dusting off their sunglasses. So let’s try this flowery dish for the weekend; a very healthy and easy flower salad with poppy seed dressing.

Salad
Mixed blend of greens
Edible flowers (squash blossom, rose, pansy, dandelion, chamomile, saffron, zucchini flowers) (please don’t go picking the mentioned daffodil; these flowers are toxic!)
1 blood orange, peeled/sliced into rounds
1 small carrot, sliced into dimes

Poppy seed dressing
2 tbsp mayonaise
2 tsp spicy Dijon mustard
1 1/2 tbsp olive oil
2 tbsp apple cider vinegar
1 tsp lemon juice
1 tbsp agave or maple syrup
1 tsp shallots, finely chopped
1 tbsp poppy seeds
1/2 tsp garlic powder
dash of pepper

Wisk all ingredients very well and sprinkle over your salad. Enjoy!
