Friday Food \ Duck Noodle Soup

This Friday is perfectly suited for some Chinese style comfort food! Simple but tasty: roasted duck, bok choy, mushrooms, onions and water make a nice duck soup. The only thing you need to do is find a place where they sell fresh duck-filet and put it in a large saucepan. After three hours of simmering, add the noodles and some more veggies and you’re good to go. Check out the recipe after the jump and give it a try.
INGREDIENTS \
1 500 gr duck-filet
3 dried shiitake mushrooms, rehydrated and washed
2 thin slices of fresh ginger
3 green onions, roughly chopped
1 liter of water
Noodles of choice
1 bok choi per person
salt and white pepper
HOW TO PREPARE \
1. Cover the mushrooms with some hot water for 5 minutes, then rinse them under running water to wash off any dirt hiding in the mushroom gills.
2. Rinse the duck pieces with some cold running water.
3. Put everything in a large saucepan and simmer for 2 – 3 hours and skim off any scum that rises to the surface. Season with salt and pepper.
4. Cook your noodle of choice according to package instructions.
5. Add the bok choy to the noodles and cover, cook for about 1 – 2 minutes. You want the bok choy to be crunchy. Make sure it doesn’t turn translucent because that means it’s overcooked.
6. Pour the noodles in a cup and place the duck on top.
7. Enjoy
