Friday Food \ Fish package with coconut

friday foodThe following dish is extremely quick and simple to prepare, delicious, very healthy and light. Instead of the oven, you can also put these fish packages onto the barbecue. Also great with rice instead of noodles.

Ingredients

1 paksoi, chopped in chunks of appr. 1 cm
300 gr. pangasius fillet
1 red onion, finely chopped
200 ml coconut milk
250 gr. noodles
2 tbsp oil
2 tbsp soy sauce
pepper and salt
lime

Preheat the oven to 200C. Devide half of the paksoi among 4 sheets of aluminum foil, of appr. 30 cm each. Put the fish on top of the paksoi. Add the chopped onion and salt and pepper. Fold the aluminium foil to packages. Pour in the coconut milk and completely close the packages. Put the fish packages in the oven for 15-20 minutes. Meanwhile, cook the noodles and heat the oil in a wok. Fry the rest of the paksoi for 2 minutes, then add the noodles and the soy sauce and wok for 1 minute. Put the noodles and fish package on a plate and serve with wedges of lime.
